Zucchini Bread

Ingredients

  • 3 Cups Flour

  • 1 tsp Salt

  • 1 tsp Baking Soda

  • 1 tsp Baking Powder

  • 3 tsp Cinnamon

  • 3 Eggs

  • 1 cup Vegetable Oil

  • 2 1/4 cups White Sugar

  • 3 tsps Vanilla Extract

  • 2 cups grated Zucchini


Optional: 1 cup chopped Walnuts

Directions

  1. Preheat oven to 325°

  2. Grease & flour 2 8x4 bread pans

  3. Sift dry ingredients

  4. Beat Eggs, Oil, Vanilla and Sugar together in a large bowl - add sifted ingredients to creamed mix and beat well

  5. Add in Zucchini and Nuts - mix well

  6. Split batter between both pans - bake for 40-60 minutes until toothpick in center comes out clean

  7. Cool for about 20 minutes in pan on cooling rack before removing from pan
