Hawaiian (Disney) meatballs

Ingredients

  • 1 pound Ground Beef

  • 1/3 cup Panko Bread Crumbs

  • 1/3 cup Sambal Oelek Ground Fresh Chili Paste (maybe try Garlic)

  • 2 eggs



  • 1 can Diced Tomatoes

  • 1 1/2 Brown Sugar

  • 10 oz Chicken Broth

  • 1 Tbs Lemon Juice

  • 1 Tbs Lime Juice


  • 32 oz Silk Coconut Milk

  • 2 Tbs Canned Coconut Milk

  • 1/3 cup Fish Sauce


  • 1 1/2 cup Heavy Whipping Cream

Instructions

  1. In a medium bowl combine ground beef, bread crumbs, eggs and Chili sauce.

  2. Roll combined meat into desired size and place on parchment lined cookie sheet. Bake at 350 degrees for roughly 20 minutes.

  3. While meatballs are baking, combine diced tomatoes, brown sugar, chicken broth, lemon juice, lime juice in a large sauce pan. Mix and bring to a boil, stirring occasionally. Reduce to about 1/2 volume.

  4. Add coconut milk, canned coconut milk and fish sauce. Return to boil, reduce to medium heat. Reduce 1/4 of volume.

  5. Lower heat to medium, add heavy cream. Watch carefully to avoid boiling over. Reduce to thickness desired. Can add cornstarch & water mixture to thicken.

  6. Let meatballs rest 5 minutes prior to combining with the sauce - stir to coat.

  7. Serve over white rice.
