Chocolate Mint Candy Cookies

Ingredients

  • 3/4 cup margarine

  • 2 Tbsp water

  • 2 eggs

  • 1 1/2 tsp baking soda

  • Andes Mints - cut in half


  • 1/2 cup brown sugar

  • 2 cups (12 oz) chocolate chips

  • 2 1/2 cups flour

  • 1/2 tsp salt

Directions

  1. Combine margarine, brown sugar and water - microwave until melted.

  2. Stir in chocolate chips until melted. Cool for 10 minutes.

  3. Beat in eggs, add flour, baking soda, and salt.

  4. Mix and chill for 1 hour.

  5. Roll into balls and bake at 325° for 8-10 minutes.

  6. Remove from oven and place Andes mint candy on top of each cookie.

  7. Let stand until melted, then spread as frosting over the cookie.
