Spinach Lasagna

Ingredients

  • 1-2 containers of Rana alfredo sauce

  • Milk

  • 1-2 boxes of lasagna noodles

  • 1 small container feta cheese

  • ½ - ¾ container of ricotta cheese

  • ¾ container asiago cheese

  • ½ container cottage cheese

  • Other Italian cheeses optional (parmesan, romano) I think I’ve used these sometimes, but not always

  • Mozzarella cheese

  • Prego sauce

  • 2 bundles of spinach

  • 1-2 eggs

  • Garlic -I used the minced stuff that comes in a jar

  • Salt and pepper

Directions

  1. Chop the spinach

  2. Add eggs, garlic, salt & pepper to spinach and thoroughly stir -set aside

  3. Mix all cheeses except Mozzarella

  4. Lightly cover the bottom of the pan with alfredo sauce

  5. Place uncooked noodles in the bottom of the pan

  6. Spread alfredo on top of the noodles As you run out of alfredo sauce, add some milk to the container and stir to spread things out

  7. Spread spinach mixture on noodles

  8. Add cheese mixture

  9. Cover the remaining spaces with mozzarella

  10. Continue the above steps for more layers

  11. On the top layer, completely cover the top of mozzarella

  12. Add a drizzle of prego sauce on top of the cheese

  13. Bake at 350 for 60-90 minutes or until the top if slightly golden. The noodles should be soft, if they’re not bake a bit longer at a lower temp.
