Chicken Cutlets

Ingredients

  • 1/2 cup all-purpose flour

  • 1 1/2 tsp garlic powder

  • 4 tsp paprika

  • 2 tsp yellow curry powder

  • Kosher salt

  • Fresh ground pepper

  • 1 1/2 cup panko breadcrumbs

  • 3 large eggs

  • 2 tbsp grainy mustard

  • Olive oil

Instructions

  1. If using chicken breast, cut in half and pound out to even thickness

  2. Bowl 1: flour, garlic powder,2 tsp paprika, 1 tsp curry powder, salt and pepper

  3. Bowl 2: Whisk eggs and mustard

  4. Bowl 3: breadcrumbs, 2 tsp paprika, 1 tsp curry, salt & pepper

  5. Season chicken with salt and pepper

  6. Dredge chicken in flour, then egg bath, then breadcrumbs, shaking off excess in-between

  7. Fill pan with about 1/2 inch of oil, heat to 350°

  8. Cook about 3-4 minutes per side


(works really well to fry only until breading is perfectly brown, then place chicken in baking dish and bake @ 350° until sauce is complete)
