Chicken Cutlets
Ingredients
1/2 cup all-purpose flour
1 1/2 tsp garlic powder
4 tsp paprika
2 tsp yellow curry powder
Kosher salt
Fresh ground pepper
1 1/2 cup panko breadcrumbs
3 large eggs
2 tbsp grainy mustard
Olive oil
Instructions
If using chicken breast, cut in half and pound out to even thickness
Bowl 1: flour, garlic powder,2 tsp paprika, 1 tsp curry powder, salt and pepper
Bowl 2: Whisk eggs and mustard
Bowl 3: breadcrumbs, 2 tsp paprika, 1 tsp curry, salt & pepper
Season chicken with salt and pepper
Dredge chicken in flour, then egg bath, then breadcrumbs, shaking off excess in-between
Fill pan with about 1/2 inch of oil, heat to 350°
Cook about 3-4 minutes per side
(works really well to fry only until breading is perfectly brown, then place chicken in baking dish and bake @ 350° until sauce is complete)
