Carbonara Pasta

Ingredients

  • 8 oz Spaghetti

  • 6 oz Pancetta

  • 2 cups Half & Half

  • 2 large egg yolks

  • 1 1/2 cups Parmesan Cheese - freshly grated

  • 2 tsp Salt

  • 1 tsp Pepper

  • 4 tbsp Fresh Basil - chopped (4 tsp Dried Basil)

Directions

  1. Cook pasta, drain and set aside.

  2. Crisp pancetta over medium-low heat until crisp. Transfer pancetta to bowl leaving grease in pan.

  3. Add half & half to skillet and bring to simmer.

  4. Whisk egg yolks into sauce followed by parmesan cheese.

  5. Stir in salt and pepper

  6. Add cooked pasta, bacon and basil to pan, toss and serve.
